Defending My Cooking :)

Geez. A girl gets the reputation in her family for not being a cook and it sure sticks! Although my idea of cooking used to be making microwave meats and instant mashed potatoes (which were eaten on "Meat Brick Mondays") I'm happy to say I now cook from scratch most days of the week. Tonight's dinner, pictured below, was marinated, grilled Mahi Mahi with stir fried mixed vegetables. I had a slice of toast with mine too.


The berry crumble was delicious, despite its resemblance to mulch. The funny thing about it looking like mulch is that we're definitely what Mama Pat (Picard's Mom) lovingly calls "sticks and berry eaters", otherwise known as health nuts. So, it doesn't surprise me that a dessert I consider uber-yummy looks like it came out of the yard :) The crumble is made of oatmeal, pecans, walnuts and almonds mixed together with molasses and spices. The berries are strawberries and raspberries sprinkled with honey and cinnamon. It was ooey gooey, fresh-baked goodness.


In other supporting evidence of my cooking ability, I have also made turkey burgers, sweet potato fries and spaghetti this week. See, a girl can grow up and make her family proud! Love you guys! Thanks for the comments!

CONGRATULATIONS! I just read the Indy paper. A cool million?! Wow. Don't spend it all in one place. Or do! Buy a place! As I say every two weeks, "Thank You Uncle Eli".

For cooking, I have a new hobby: make ahead freezer meals. I think without my freeze ahead cookbooks, we would starve. The recipes make 3-12 servings that I make all at once and freeze in my chest freezer. A few nights per week I thaw and add a vegetable. Last night we had ham and corn chowder with cornbread. Yummy. It will be my shower gift to you!

i move away which unables me to cook for you and then go off and learn by yourself. your dinner looks super awesome...i want the recipe for your dessert. you know how i love the sweets.
